This makes a zesty side dish, or add to pasta and top with hummus for a fabulous main course!
Please don’t mind the fact that I already ate half of the recipe before I remembered to take a picture of the final, cooked dish. The marinade is made of kitchen staples and creates a simple, yet memorable flavor. Perfect for a quick, weeknight meal or an impressive side dish for a dinner party.
Balsamic-Garlic Mushrooms and Zucchini
2 zucchini, sliced
1 package white mushrooms, rinsed and sliced
1/4 cup balsamic vinegar
3 T sherry cooking wine
2 cloves garlic, minced
3 green onions, sliced
salt and pepper
1. Preheat oven to 400 degrees. In a large, oven proof glass bowl, mix vinegar, wine, garlic, and onions. Add a few shakes of salt and pepper.
2. Add mushrooms and zucchini to dish and let marinate for 30 minutes.
3. Place dish in oven and cook for 15 minutes.
4. Stir and cook an additional 15 minutes.
Garden Update: I planted some herbs (sage, parsley, basil, oregano, and thyme) and tomato seeds last Sunday. Here’s to hoping for nice weather in the near future!
