Magic Green Juice

Ok, so it may not be magic, but this juice will make you look and feel amazing! Plus, you don’t need a juicer, and you don’t have to strain anything. Delicious and refreshing juice from a blender. . . magical.

Granted, it won’t be as smooth as store bought apple juice or what you might get using a juicer – there is a little texture, but it’s still pretty smooth. I couldn’t get it to photograph correctly, but this juice is a gorgeous emerald green!

2013-10-24 13.05.07In between drinking wine like it was going out of style on our recent trip to Napa Valley, Andrew and I had some really good green juices and smoothies. Hence, the inspiration for this recipe.

So many fruit and veggie servings in one glass! This is a great way to start your day, whether you are trying to continue healthy habits or undo some unhealthy choices from the night before. 😉

Magic Green Juice
Serves 2

Granny smith apple (2 small or one large), cut into 1/4ths
2 cups spinach
1 cup kale
1/2 banana, sliced
1/4 cup fresh parsley
1/4 cup fresh mint
1 T spirulina
1/2 cup orange juice
1 cup water
1 scoop vegan protein powder (optional)

1. Place all ingredients in a high speed blender.

2. Blend at a medium speed until large pieces are broken up, then blend at top speed until liquified. You may need to add a little more water to get your preferred consistency.

3. Pour into two tall glasses and serve. Alternately, let sit in the fridge for 30 minutes if you prefer a colder drink.
